Spelt is an heirloom ancient grain, one of the oldest grains still around today at over 7,000 years old. A natural hybrid of Emmer and wild grasses.
It has lower gluten content than modern wheats, as well as more nutrients (vitamins & minerals) and more fiber. With a slightly nutty taste, whole grain Spelt has made a comeback in recent years as a healthier alternative to modern wheat breads which are typically "enriched" with vitamins.
