What is a soup chicken?
A soup chicken is an egg laying hen that has retired from laying eggs (about 2 years old). That’s awesome when you consider that chickens raised for meat live to be 30-45 days old before becoming dinner. Soup chickens, also called stew hens, make for a great slow-cooked chicken stock and soup. The longer you cook it, the more tender the meat gets!
A typical soup chicken is in the 2.5 to 3.5 lb. range
