Organic, freshly-milled, 100% whole spelt flour is one of our most popular specialty products. Spelt is an heirloom ancient grain, one of the oldest grains still around today at over 7,000 years old. A natural hybrid of emmer and wild grasses — also known as farro grande, or einkorn & emmer’s younger brother — spelt grows tall and has a hull just like it’s older siblings. However, spelt performs much better in bread baking applications than it’s siblings. It develops a stronger gluten network that will give your spelt bread greater volume than einkorn or emmer. Organic whole spelt flour can be a great substitute for organic whole wheat or all-purpose flour in pie and tart crusts too. Also, spelt flour has similar baking characteristics as wheat flour, but can be a healthier choice since it is more water soluble than wheat, making it easier to digest.
Nutritionally, it has lower gluten content than modern wheats, as well as more fiber, vitamins, and minerals. With a slightly nutty taste, whole grain spelt has made a comeback in recent years as a healthier alternative to modern wheat breads which are typically "enriched" with vitamins.
